Name: Garlic bread with herbs


Description: Oven fresh bread with garlic and herb seasoning


Accomplice:
Wine and cheese

Recipe: For the dough we need all purpose flour, 3 tsp yeast, hot water, olive oil, salt , sugar and a pinch of baking soda. Add a tea spoon of water and sugar in 3 tsp of yeast and let it bubble for 10-15 min. In a large bowl stir in the yeast mix with flour, salt, baking soda and hot water make a soft dough. Add olive oil as and when required.
Let the dough rest for 2-5 hours or refrigerate over night.
You'll notice the volume of the dough increases twice its size. In a baking tin arrange the dough in desired shape.
You can roll it with some oil in shape of a
croissants. Smear some crushed garlic in olive oil and dry thyme or rosemary followed by egg white. Bake it for 20-30 min in a pre-heat oven at 350 temp.



Comments: You can you can add some crushed garlic in the dough itself. Make a dip with olive oil and balsamic vinegar to polish the bread off!

Bitten by lazy bug!







I have been occupied and lazy to blog here.. got an outstanding amount of recipes to posts.

Cooked Thai for dinner few weeks ago, made flash cards for the recipes and due to heightened laziness clicked then to post on the blog!
Anyways, I made chicken satay, peanut sauce, basil rice and green curry with prawns.



Marinade for chicken Satay:

Black pepper, Cumins, ground coriander, turmeric, chopped garlic, peanut oil, soya sauce, sugar, lime juice, fish sauce. I also added some peanut paste and dried shrimp powder.
just bled in all of the above and keep the chicken marinated over night.
Broil the chicken at 400 temp for 25 min or put them on skewers and grill them till done.

Peanut Sauce: One of my favorites, easy breezy to make!
You need Peanut butter or peanut finely powdered, hot chili sauce, garlic crushed, honey (lots of it) cayenne pepper or any locally available green or red chilies, Lime juice and peanut oil.
You can add a dash of fish sauce or shrimp paste for that extra fishy taste! Mix all the ingredient, add freshly chopped basil and cilantro just before serving.

Basil Rice: Make rice as you do normally just before transferring into a serving bowl add basil in peanut oil tempering, you can also add some lemon grass.

Green Curry with Prawns:
Boneless chicken, coconut milk (tinned or fresh). For the green curry paste : Green chillies, garlic, onion, ginger, turmeric, peanut oil, cumin, peanut paste, shrimp paste. Make a fine paste with all of the above ingredients. In a wok saute lemon grass and basil leaves, add the chicken and stir in the green curry paste mix well, finally add the coconut milk a pinch of sugar and salt to taste. Bring it to boil for a creamy consistency. You can add some blanched string beans or green beens to the curry.
