Name: Chicken Zinger

Description: Chicken marinated in lemon
and garlic saute on a bed of leek.

Type: Entrée (main dish)

Accomplice: Steamed rice or noodles.


This chicken dish is a delightful coming together of consenting flavors. The lemony twang with with the peppery zest are the predominant seasonings that you taste.

Recipe: Cut chicken breast, bone or boneless into small chunks. In a big bowl mix crushed garlic, grated ginger, crushed green chili, white wine vinegar, lemon juice, whole lemon cut into pieces, corn starch, salt and pepper. Mix well, squeeze out the lemon as you mix. Retain the skin. Marinade for 60 minutes. You need to get the marinade coat the chicken well so be lavish with all the above ingredients but not with the vinegar, a dash or two is enough. Also we won't fry the chicken so corn starch is just for coating and later will make for a juicy consistency for the dish. Finely chop the leek into long vertical wedges. In a skillet heat olive oil add a red dry chili. Add the leek and saute till done. Add the chicken chunks with the marinade. Now cook in medium heat till the chicken is done. we don't need any gravy so let the water evaporate. Turn the chicken once or twice and make sure it's sauted well.
