Description: Mix-vegetables in pickle gravy

Accomplice:
Goes well with Paratha or Puri.


A spicy veggie mix makes an excellent dish to serve Vegetarian guest.
I've used ready made pickle mix here, we can also use pickle leftovers scrapping the bottom of the pickle jars!

Recipe: Cut the vegetables into square bite size pieces. I have used cauliflower, capsicum, Mushrooms and carrots. In a pan add 2-3 table spoon of oil, add the veggies and stir, add chopped tomatoes/ pureed or paste. Close lid and let the vegetables soften a bit. Add 2 spoonful heaps of pickle gravy, and stir it in. Check for salt we might not need it at all as the pickle usually have an overdoes of it. Add a little water or yogurt and let it simmer till done.
You can stuff Bhindi(ladies finger), Green chillies even Karela (bitter groud) with pickle mix and stir fry it.


Comments:The key ingredients in the pickle mix are ginger,garlic and chili paste, the whole spice mix are aniseed,cumin, mustard, onion and fenugreek seeds and other powder spices are coriander, turmeric and black pepper with salt.You can add any of the above ingredients in the pickles you use depending upon their content. Mixing all the above ingredients in plenty of oil can be made at home and used fresh or stored for couple of months.
