Name: Mango Chutney

Description: Sweet and sour mango relish


Accomplice: Goes well with all kind of Indian dishes specially rice and curry dishes.

This is an easy and quick chutney using Paanch phoron.

Recipe: Cut the Mango into small cubes retain the seed. In a shallow pan, add oil, pinch of hing, whole red chili and paanch phoron. Add the mango and close the lid. After a mintue or two add sugar for one mango add 3-4 tea spoon of sugar or jaggery. Mix pinch of salt, turmeric, red chilli powder and stir, add tamarind pulp (optional) and water.
Cover and let it simmer. Sprinkle a little cumin powder when done. Serve when cold

Comments: I don't usually peel the mango as most of the time the skin is edible, same goes for the seed. I save it for myself and use both my hands relishing it when nobody's watching!
